From Hive to Jar: Processing our Welsh Farmhouse Honey
Here at Treddafydd Farm, we believe the best things in life are simple, seasonal, and full of real flavour. Our Welsh farmhouse honey is just that—pure, unprocessed, and straight from the hives in our orchard and market garden.
Our bees roam freely across organic fields, hedgerows, and orchard trees here on our smallholding on the beautiful Llŷn Peninsula, foraging from wildflowers, clover, and fruit blossom, ( and a few weeds!).The result is a honey that truly reflects this land: light and floral in early summer, richer and darker as the season deepens, and truly sticky once the heather kicks in... (thixotropic is apparently the correct term, like glue more like!)
A Taste of Tradition
Honey has been part of British life for centuries—long before we ever had sugar in our cupboards. Beekeeping in the UK goes back to Roman times, and in medieval monasteries, monks carefully tended hives, producing honey for both nourishment and healing. (And a bit of mead)

Farm Life Isn’t Always Sweet…
This season’s honey might taste floral, golden and smooth—but it hasn’t all been plain sailing!
Vince, our resident beekeeper and chief jam-stirrer, has had a bit of a battle on his hands (and arms… and ankles). One of the hives has taken a particular dislike to him this year. After a few well-aimed stings, they’ve taken to following him around the farm—making jobs like strawberry picking or weeding the veg patch a little more... tense. He's just come in from picking strawberries, wearing his bee veil, to tell me the won't let him near the chuckleberries! Thankfully they are not quite ripe yet so we have time to placate the little darlings! (That's not what he calls them .....)
We’re convinced they’re just very protective of their excellent work—but Vince might not agree while he's legging it across the market garden, seeking sanctuary indoors!
Why Raw Honey?
Unlike most supermarket honeys—which are pasteurised and ultra-filtered—our raw honey is packed with all the goodness nature intended.
We never heat or fine-filter our honey. That means you get:

Supermarket honey might look neat and tidy in the jar—but all that heating strips away the very things that make honey special.

Every jar of honey we sell is made right here on the farm, in small batches. The bees do most of the work (even if they don’t always appreciate our help).
From hive to jar, every spoonful tells the story of the land—and of a very persistent, patient trainee beekeeper doing his best not to get stung again.
